  • Seasonings: This recipe uses standard salt and pepper, garlic powder, an optional dash of red chili flakes, and then Italian seasoning on top of the buns. You can substitute the Italian seasoning with ½ teaspoons dried oregano, ¼ teaspoons dried basil, and ¼ teaspoons dried thyme mixed together. You can also use Every thing Bagel seasoning, poppy seeds, or sesame seeds instead.
  • Beef: Instead of shaved beef, use ground beef as described below.
  • Slider Rolls: Slider rolls are small, soft buns perfect for mini sandwiches. Popular choices include Hawaiian rolls, small dinner rolls, or even homemade sourdough buns. The best type to use are connected, making it easy to add your filling without it falling through and being wasted or excessively messy. These rolls still come apart perfectly when people go to grab a slider.

Make Philly Cheesesteak Sliders with Ground Beef

You’ll find these exact instructions repeated in the recipe card notes.

Ground Beef Philly Cheesesteak Slider Instructions

To use ground beef instead of shaved beef, begin by heating 1 tablespoon of oil or fat in a skillet over medium-high heat. Once the oil is hot, sauté 1/2 of a large yellow onion, minced finely and 1 small green bell pepper, chopped into small pieces, for three to four minutes until softened. Remove the vegetables from the skillet and set them aside.
In the same skillet, add 1 pound of ground beef. Season with 1 teaspoon of salt, ½ teaspoon of pepper, and ½ teaspoon of garlic powder. Cook the ground beef, breaking it apart with a spatula, until browned and cooked through, about five to six minutes. Stir the sautéed onions and peppers back into the ground beef.
Once the ground beef mixture is ready, proceed with the recipe as written, starting from layering the cooked meat onto the rolls in the casserole dish.

Steps 1-3: Start by heating olive oil in a skillet over medium-high heat. Once the oil is hot, add the sliced yellow onion and green bell pepper and sauté until softened, about 3-4 minutes or longer to get them more browned if you prefer. Remove the vegetables from the skillet and set them aside.

In the same skillet, cook the shaved beef with salt, pepper, and garlic powder until browned. While the beef cooks, slice the dinner rolls in half horizontally, keeping them connected, and place the bottom half into a casserole dish.

Steps 4-6: Next, assemble the sliders by layering the cooked beef evenly over the bottom half of the buns. Spread the sautéed onions and peppers over the meat, and then cover the entire dish with slices of provolone cheese. Make sure the cheese is evenly distributed for the best melting.

Steps 7-8: In a small bowl, melt butter and mix in garlic powder, Italian seasoning, and red pepper flakes (optional). Brush this mixture over the top of the buns. Cover the casserole dish with foil and bake in the oven. After 10 minutes, remove the foil and continue baking until the tops of the buns are golden and the cheese is melted. Serve immediately.

Storage, Freezing, & Reheating

How to Store & Reheat Leftover Sliders

To store Philly cheesesteak sliders as leftovers, place them in an airtight container or wrap them tightly in foil. They’ll keep in the refrigerator for up to 3 days. When you’re ready to reheat them, preheat your oven to 350°F, cover the sliders with foil, and bake for about 10-15 minutes until heated through.
For a quicker option, you can microwave them for 30-45 seconds, but the oven will help keep the rolls from getting too soft.

How to Freeze Sliders Properly For Long Term Storage & Meal Prep

To freeze Philly cheesesteak sliders for long-term storage, let them cool completely after baking. You can either wrap each slider individually or keep them connected. If wrapping individually, use plastic wrap or foil for each slider, then place them in a single layer inside a freezer-safe bag or airtight container.

If you prefer to keep the sliders connected, wrap the whole set in plastic wrap or foil, keeping them in one layer, and store them in a freezer-safe bag or container.

The sliders will last up to 3 months in the freezer. When you’re ready to eat them, thaw the sliders in the refrigerator overnight. For reheating, preheat your oven to 350°F, cover the sliders with foil, and bake for 10-15 minutes if they’re separate or 15-20 minutes if they’re still connected.
This method keeps the sliders fresh and prevents them from becoming soggy or dry.

My Top Tips

  • Toast the bottom half of the rolls: Before adding the beef, pop the bottom half of the rolls in the oven for 3-5 minutes to lightly toast them. This adds a bit of crunch and helps prevent the buns from getting soggy when you layer the meat and vegetables.
  • Use high-quality cheese: If you can, use freshly sliced provolone from the deli instead of pre-packaged slices.
  • Caramelize the onions: Instead of just sautéing, cook the onions low and slow for 15-20 minutes until they caramelize.
  • Add a splash of Worcestershire sauce to the beef: A small splash while cooking the beef adds a nice umami flavor.
  • Serve with dipping sauce: A side of au jus or garlic butter for dipping adds a fun twist and extra flavor to your sliders.
  • Butter the bottom of the rolls: before adding the filling, spread a thin layer of butter or garlic butter on the cut side of the bottom rolls.

Notes

Storage of Leftovers
Philly cheesesteak sliders can be stored in an airtight container or resealable bag in the refrigerator for 3-5 days. If you won’t be able to eat your leftovers in time, wrap them in foil and then place them in a resealable bag to prevent freezer burn. Your sliders will stay fresh for up to 3 months in the freezer. To reheat, allow the sliders to defrost in the refrigerator for 1-2 hours or 30 minutes on the countertop. Individual sliders can be microwaved 1-2 minutes or placed on a baking sheet in a 350°F oven for 10-15 minutes.
Make Ahead & Freeze
These Philly cheesesteak sliders are a great make ahead, freezer prep meal. Make them according to the directions and allow them to cool completely on the counter (no longer than 2 hours). Remove them from the baking dish and wrap in plastic wrap and then foil and keep them in the freezer for up to 3 months. Always make sure to label your foil with the contents and date when freezer prepping to make it easy to decipher what is in your freezer. When you’re ready to eat, allow the sandwiches to defrost and bake them in a 350°F oven for 10-15 minutes.
