Central European Cuisine
The Central European countries you will find recipes from on my blog are: Germany, Austria, Czechia, Slovakia, Hungary, Croatia, Serbia, Slovenia, and Poland.
The local climate and neighboring countries heavily influence Central European cuisine. German, Austrian, and Czech cuisines show similarities but differ from highlander cuisines. Settlements closer to rivers or lakes have more fish and seafood. Mountainous areas near the Alps use more dairy products.
Polish, Slovak, Slovene, and Hungarian cuisines are Central European but differ from Czech, Austrian, and German cuisines depending on the area. Polish and Slovak cuisine have East Slavic and Germano-Czech influences. Slovene cuisine has Balkan and Mediterranean influences.
Hungarian cuisine has East Slavic, Balkan, and Ottoman influences and is often considered the most dissimilar.
Some of my favorite recipes on the blog from this vast and diverse region are my German sauerkraut soup recipe, Segedínský guláš a pork & sauerkraut stew that is enjoyed by Slovak and Czechs, although it has Hungarian roots.
You should also try my recipe for Croatian grah, the quintessential Balkan peasant stew of smoked pork and beans.
